Christmas Eve Dinner
Where:
Uncle's house (father's brother)

Menu:
Antipasto (assorted meats/cheeses/salads/breads)
Spaghetti in crabsauce w/king crab legs
Basically a marinara sauce but instead of meat it's crab.
Stuffed Calamari
Body of the squid is stuffed with breadcrumbs and cheese.
Shrimp Salad
Served cold, made with Shrimp, Celery, Cuccumbers, simple lemon dressing. Different things can be added, red onion works, baby scallops, any firm whitefish, carrots, etc.
Lobster Tails
This year I convinced unc to grill them. Metal skewers, brush with a olive oil, alt and pepper. Simple.
Baked Calms
No explanation needed.
Not 7 fishes like they do in Italy but pretty damn good.

Beef Brisket is underated
I made a killer meal yesterday. Beef Brisket, Buttery Garlic Mashed potato's, Sauteed asparagus and a white and red coleslaw. It was fantastic.
I was hesitant to cook the Brisket on my Weber gas grill (mainly because it would seem charcoal along with a combo of wood chips would be the better) but decided to do it after all pretty much because I'm pretty good at grilling. So here's what I did.
Dry Rub:
Sweet Paprika, Onion Powder, Garlic Powder, heavy sea salt, heavy cracked black pepper, ground mustard, cayenne pepper, oregano and cumin.
Liberal on the paprika, moderate on the powders, heavy on the salt and pepper, easy with the oregano, cumin and mustard, use the cayenne to your liking.
First step is to let the beef dry out. I hate it when people or my wife take the meat out of the pack and immeditely season it. No. Beef should be dried out a bit. I like to leave it out for a while, maybe an hour and then refrigerate it in a pan or something for another hour then take it out to season. Obviously during the week whilst at work it's impossible to do so. But if you have time I really think it makes a difference.
Ok, so rub away. Pre-heat your gas grill to 250 degrees. You can do this usually by leaving the back burner off and the middle/front burners on low. Place your season beef in an aluminum pan, I doubled up, and make sure it's fat down. You want the fat to drip onto the bottom. Cover the pan with foil, double that up too. Place in the center of your grill and have a beer or two. Let this cook away for 3 hours. But at the hour mark, flip the fat side up and notice the amount of juice you already have in the pan. This means it's working. Keep it fat side up for about 30-35 minutes. Then flip back to the way it started for the strech run. One thing to do that I forgot to mention. If you have any beef stock on hand, when you flip the meat from the fat cap side down to fat cap side up pour in about 1/2 cup of the stock to the juice. It will add to the gravy flavor. (Red wine & believe it or not Root Beer also works here but I would use the red wine towards the end not when you flip the fat). After about 2.5 hours open her up and let the meat sit in those wonderful juices and turn off the grill. Basting would be smart here too.
To get that gravy working (or just leave the juice as is, au jus style) just pour it into a pot, get a nice heat on it and work in a flour water mixture, constantly stirring. You want a dark tan brown color. If you like thick gravy use a bit more flour. Then strain to avoid clumps and your gravy is done.
This is a hell of a dinner. Use it. Let me know how it works. It worked for me and it was my first time doing a brisket on the gas grill without smoking it. This is how I do my ribs except the dry rub is different. Mangia!

Baby Chickens
Cornish Hens anyone?
They are underated. Just young chickens, they can be no more than 2 pounds and get slaughtered no more than 5 to 6 weeks old which sounds terrible but anyway my favorite way to roast a cornish hen is this recipe which is my own.
I like citrus flavors with chicken so this has a bit of a citrus glaze or marinade thing going on.
Juice two oranges and one lemon. In a bowl whisk in about 3 tablespoons of honey until you form a glaze (something you'd dip a donut in).
Salt and pepper the bird FAVORABLY. Rub good olive oil all over and season bird with rosemary, thyme and sage. Inside the bird pour a bit of oil in there, just a little to create like a penny sized pool. Stick 2 or 3 cloves of garlic whole and 2 whole bay leaves. If there is room also put the rinds of the citrus fruits you used in there. Truss the bird if you want or just rest the legs so that they don't move.
Bake at 400 for 45 minutes, take the glaze and paint it all over. Bake for another 10 minutes.
Take the bird out, let it rest. Paint on the glaze a little more if you wish. If you have any glaze leftover do the following.
Boil a cup of water, season with a pinch of salt, dump in the glaze, furiously whisk until the glaze becomes a liquid. Pour into a bowl and use as a dipping sauce for the hen.

I salute you Bacon!
The USDA defines bacon as "the cured belly of a swine carcass". Awesome.
Bacon goes with everything. There have even been versions of chocolate covered bacon that I have yet to get my hands on. I mean even the bacon grease should be getting used. Maybe a bacon box juice should be made. I don't know, just throwing it out there.
What doesn't bacon go with? Yea, that would be nothing.

Buffalo style
Buffalo chicken tenders. Sweet.
Flour batted. Pan fried. Rolled around in hot sauce.
Alot of things taste better buffalo style.
Wife makes a nice bean salad too. Kind of cools things off.
Red Kidney, Black beans, Chickpeas, Cucumber, Sweet Corn, Carrots, Celery.
Sometimes red onion. Not today though.

Cabana
Cabana restaurant is a cuban joint. I proposed to the misses there, it's located at the South Street Seaport in lower Manhattan. So it was only right that we celebrate our third anniversary there on Saturday night.
I got the Ropa Vieja, an old staple. Man was it delicious.
Well first we started with Tostones Rellenos which is green bananas filled with chicken, shrimp and ropa vieja. Then we had some Marquitas on the side which are like the chip verison of said green bananas. The lady got the chicken and shrimp entree. The red snagria is off the chain, I mean that with all sincerity.
No really the red sangria is so good it makes my balls tingle when i sip it.
Onto the Ropa:
Ropa Vieja is Shredded skirt steak simmered with onions, peppers and plum tomatoes. Over thier rice and dark knight black beans. It's like a gold bar on a plate.
For dessert we just ate each other, some champange and chocolate covered strawberries were involved.

Must See TV
Must watch TV if your into travel and food. Bizarre_Foods with Andrew Zimmern show on the Travel channel and Anthony Bourdain: No Reservations also on the Travel channel.
Zimmerman's show is terriffic. He eats some really fucked up shit, always thinks it's good (for the most part) and really educates the viewers on the culture behind the fucked up food.
Bourdain's is a bit more focused on more normal eats and relative culture in other aspects.

Bacon Chocolate Chip Cookies
Try this and get back to me. Never tried them:
Bacon chocolate chip cookies-
3/4 cup butter(It has been suggested that using 1 full cup of butter works best due to cookie dough dryness)
2/3 cup packed brown sugar
2/3 cup granulated sugar
1 teaspoon hazelnut (or almond) extract *Edit- It has been suggested that the almond flavouring may be overpowering to the flavour of the cookie, feel free to add this ingredient to taste*
1/2 teaspoon vanilla extract
1 egg (It has been suggested that using 2 eggs works best due to cookie dough dryness)
2 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup white chocolate chips
1 cup dark or semi-sweet chocolate chips
2 cups bacon bits (if preferred, you can separate the dough into two parts and only make half of the dough into bacon cookies, in which case you'll only want to use 1 cup bacon bits)
Also, you can make your own bacon bits, just make sure you pat down the bacon chunks with paper towels to remove as much extra bacon grease as possible. *Edit* one of my readers made their own bacon bits and found out that apparently it takes about 2lbs of bacon to make 2 cups of bacon bits, just for future reference.
Directions-
preheat oven to 350 degrees fahrenheit.
Beat together the butter, sugars, flavouring and eggs until creamy. In another bowl, sift together the dry ingredients. Add the dry ingredients to the butter mixture and stir together. Dough will be slightly soft. If you want a cakier cookie, add another half cup of flour. Add in chocolate chips and bacon bits. Stir until well integrated. Place dough on a sheet of waxed paper and refrigerate at least an hour. Remove dough from fridge, pinch off 1 1/2 inch pieces of dough and roll into balls. Set dough balls about 2 inches apart on an ungreased cookie sheet. Flatten dough balls slightly with your fingers in the center.
Bake cookies for about 10 minutes, or until the dough starts to turn golden brown. Allow cookies to cool on a cooling rack while you ready the glaze.

Chain Steakhouse?
Let's get Outback tonight.
Outback, more times than none has been pretty good. Steaks are cooked to order, not over seasoned, the sides are all quality and the beer in the 22oz draft cup is ice cold and not a bad price. Pair that with the warm pumpernickel bread and crazy coconut shrimp, it's a solid B. Definetly one of the better chains, that's for sure.

What I'm making
Instead of what I ate yesterday, since I'm off for two weeks and cooking frequently I figured I'd write about what I'm making on each day.
Today is mini-burgers (70-30 sirloin) on potato buns. Regular fries, corn on the cob and OLD BAY fries. OLD BAY is a seafood seasoning that I love. Usually used on crabs or shrimp. I know you've had it before, try it on sone golden fried fresh cut fries. They are wonderful.

Today's Menu
Today I'm making Basil Chicken w/tomatoes over rice or macaroni. I haven't decided yet. Fresh Basil is very versatile. For the Monday night game I got some pigs in a blanket and wings of course. These are different though, not that I'm sick of them but all summer I've eaten Hto Wings, this time I'm switching it up to some Honey BBQ jumpoff ones. I still put some heat in the sauce though. Yes the sauce is homeade I'll post the recipe one day. But in it I add a couple of penos to turn up the heat.

Friday night
Friday night we went to this place. We've been there before so we knew the menu relatively well, the atmosphere is what this place is all about. It sits on the Brooklyn waterfront and has tremendous views of New York City.
Friday night I had the Poblano's Relleno which in english is a stuffed Poblano Pepper.
It was stuffed with Braised Short Rib Beef smothered with smoked Gouda cheese. And while I like smoked gouda it was too overpowering. I wanted to taste the beef, the spices and the inside of the pepper. Instead I tasted smoked gouda. It was disappointing. My wife's enchilada's were off the hook though so the place won't get the X mark. The margarita's, salsa, guacomole and the views are reason enough to go there again and again.
Afterwards we here a loungue we frequent often. Especially since my sister in-law works there. I had a couple of scotch soda's and we hung out. My wife got plastered. It was a nice night.

Saturday pics/Hot Wings
You know what to do. Season wings with salt and pepper. Brush with olive oil. Either Grill or fry wing (if frying no olive oil) until you get a crisp tan color. Melt a stick of butter (1 stick per 5 lbs of wings) once the butter is melted add the Frank's Red Hot. You want about 2 cups of hot sauce for Hot Wings, 1 cup for mild and 3 for very hot. But for very hot I would also season the wings with some Cayenne and throw in some crushed red into the butter. This is a classic hot wing recipe. After dousing the cooked wings with your sauce I usually bake them for extra crispiness.

Saturday, cooking for 30 people. Daughter's 1st bday party. I'm telling you this because I skipped breakfast and didn't eat until about 4:30. I'll just list what I ate since it was mostly beer.
