Pan Roast chicken

Step one:
Season chicken with salt pepper, dried thyme, oregano and citrus of your choice.
Coat pan with olive oil, set a high heat.
Sear the shit out of that chicken on both sides.
Once done let rest, it's not done obviously you see some pink in the chicken.
















Step two:
De-glaze pan with white wine, scrape the bottom to get all the bits.
Throw in onions or shallots, garlic and two Bay leaves.
Cook for about 12-15 minutes until onions are super soft and alcohol is cooked out.
Return chicken to pan, pre-heat oven to 325 degrees.
After 5 minutes put in the over for 20-25 minutes.


















Serve. I chose fresh spinach as the bed with cauflower florets cooked in a cheese sauce on the side. Fantastic dinner. Mangia.
